Bran Vegetable Meat Loaf
|Tomato juice||1 Cup (16 tbs)|
|Onion||1 Medium, quartered|
|Garlic||1 Clove (5 gm)|
|Stalk celery||1 , cut into 1 inch pieces|
|Carrot||1 , cut in to chunks|
|Chopped broccoli/Zucchini||1 Cup (16 tbs)|
|Ground beef||1 1⁄2 Pound|
|Dried oregano||1 Teaspoon|
|Bran||3⁄4 Cup (12 tbs)|
Preheat oven to 350Â°F.
In an electric blender, combine tomato juice, onion, garlic, celery, carrot, parsley, and green vegetable.
Process until completely pureed.
In a large bowl, mix remaining ingredients.
Add pureed vegetables, combining well, and then place mixture in a 9 x 5 x 3-inch loaf pan.
Bake 1 to 1 1/4 hours.
