Bran Ginger Snaps
|Sifted all purpose flour||1 1⁄4 Cup (20 tbs)|
|Molasses||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|40% bran flakes/Post raisin bran||1 1⁄2 Cup (24 tbs) (Post Brand)|
Sift flour once, measure, add soda, salt, and ginger, and sift again.
Combine molasses, butter, and sugar in a saucepan.
Cook gently 2 minutes, stirring constantly.
Cool to lukewarm.
Add cereal and mix well.
Then add flour mixture and mix thoroughly.
Chill until firm enough to roll.
Roll 1/8 inch thick on lightly floured board.
Cut with 1 3/4-inch cooky cutter.
Place on greased baking sheet and bake in moderate oven (350Â°F.) for 10 minutes or until done.
