Apricot Bran Yogurt Muffins
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Bran||1 1⁄4 Cup (20 tbs)|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|Baking powder||1 Tablespoon|
|Baking soda||1 Teaspoon|
|Chopped dried apricots||1 Cup (16 tbs)|
|Low fat yogurt||250 Milliliter|
|Vegetable oil||50 Milliliter|
In a large bowl, combine flour, bran, sugar, baking powder, baking soda, cinnamon and salt.
Set aside 2 tbsp (25 mL) of the apricots and add remaining apricots to flour mixture.
In another bowl, whisk together yogurt, oil, egg and vanilla.
Add to flour mixture, stirring just until blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with reserved apricots.
Bake in preheated oven for 20 to 25 minutes.
