Double Cheese Bran Muffins

Double cheese bran muffins balance the health quotient with the taste quotient by paring bran cereal along with parmesan and cheddar cheese. You can vary the amount of cheese in these muffins and add something exrta just to make it more interesting.
  Boiling water 250 Milliliter
  100% bran cereal 1 1⁄2 Cup (24 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Milk 125 Milliliter
  Egg 1
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Granulated sugar 1⁄4 Cup (4 tbs)
  Baking powder 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Shredded old cheddar cheese 1 1⁄2 Cup (24 tbs)
  Grated parmesan cheese 2 Tablespoon

In a medium bowl, pour boiling water over cereal and butter.
Stir until butter melts.
Set aside to cool.
Stir in milk and egg.
In a large bowl, combine flour, sugar, baking powder and salt.
Stir in 1 1/4 cups (300 mL) Cheddar cheese and Parmesan cheese.
Add cereal mixture, stirring just until moist and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with remaining Cheddar cheese.
Bake in preheated oven for 20 to 25 minutes or until golden brown.
