Double Cheese Bran Muffins
|Boiling water||250 Milliliter|
|100% bran cereal||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 Tablespoon|
|Shredded old cheddar cheese||1 1⁄2 Cup (24 tbs)|
|Grated parmesan cheese||2 Tablespoon|
In a medium bowl, pour boiling water over cereal and butter.
Stir until butter melts.
Set aside to cool.
Stir in milk and egg.
In a large bowl, combine flour, sugar, baking powder and salt.
Stir in 1 1/4 cups (300 mL) Cheddar cheese and Parmesan cheese.
Add cereal mixture, stirring just until moist and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with remaining Cheddar cheese.
Bake in preheated oven for 20 to 25 minutes or until golden brown.
