Bran Muffin Mix
|Sugar||1 1⁄2 Cup (24 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Boiling water||1 Cup (16 tbs)|
|100% bran||3 Cup (48 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
Mix sugar, shortening, and eggs with beater.
Add water and bran; mix.
Stir in dry ingredients and milk.
Fill muffin cups 2/3 full and bake at 375 degrees for 15-20 minutes.
Batter keeps 1 month in refrigerator.
Can also bake muffins in microwave, about 1-1/2 to 2 minutes each.
