Apricot Oat Bran Muffins
|All purpose flour||8 Ounce (2 Cups / 250 Gram)|
|Baking powder||2 Teaspoon|
|Oat bran||1 1⁄2 Ounce (1 Cup / 45 Gram)|
|Dried apricots||2 Ounce, chopped (60 Gram)|
|Sultanas||2 Ounce (60 Gram)|
|Egg||1 , lightly beaten|
|Buttermilk/Milk||12 Fluid Ounce (1 1/2 Cups / 325 Milliliter)|
|Golden syrup||2 Fluid Ounce (1/4 Cup / 60 Milliliter)|
|Butter||3 Ounce, melted (90 Gram)|
1. Sift flour and baking powder together into a bowl. Add oat bran, apricots and sultanas (a), mix to combine and set aside.
2. Combine egg, milk, golden syrup (b) and butter.
3. Add milk mixture to dry ingredients and mix (c) until just combined. Spoon mixture into six greased 1 cup / 250 ml / 8 fl oz capacity muffin tins and bake at 180° C / 350° F / Gas 4 for 15-20 minutes or until muffins are cooked when tested with a skewer.
