Raisin Bran Bread
|Sifted regular all purpose flour||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Seedless raisins||1 1⁄2 Cup (24 tbs)|
|Bran||1 1⁄2 Cup (24 tbs)|
|Soft shortening||1⁄4 Cup (4 tbs)|
|Hot water||1 1⁄2 Cup (24 tbs)|
|Vanilla flavoring||1 Teaspoon|
|Chopped nuts||3⁄4 Cup (12 tbs)|
1. Sift together flour, sugar, baking powder, soda and salt. Set aside.
2. Measure raisins, All-Bran, and shortening into mixing bowl; add hot water and stir until shortening is melted. Add egg and vanilla; beat well.
3. Add sifted dry ingredients and nuts; stir only until combined. Spread evenly in well greased 9 x 5 x 3-inch loaf pan.
4. Bake in moderate oven (350° F.) about 1 hour or until done. Cool thoroughly before slicing.
