Savory Bran Muffins
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Whole bran cereal||1 Cup (16 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Snipped chives||1 Tablespoon|
|Baking powder||2 Teaspoon|
|Dried italian seasoning||1⁄2 Teaspoon, crushed|
|Skim milk||1 Cup (16 tbs)|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Nonstick spray coating||1 Tablespoon|
In a medium mixing bowl stir together all-purpose flour, whole bran cereal, Parmesan cheese, snipped chives, baking powder, salt, and Italian seasoning.
Make a well in the center of the dry ingredients.
In a small mixing bowl combine egg, skim milk, and cooking oil.
Add all at once to flour mixture.
Stir just till moistened (batter should be lumpy).
Spray 12 muffin cups with nonstick coating.
Divide batter evenly among muffin cups.
Bake in a 400° oven about 20 minutes or till golden.
Remove from pan; serve warm.
