Apple Butter Oat Bran Muffins

Ingredients
  Non-stick cooking spray 1 Tablespoon
  Oat bran 1 1⁄4 Cup (20 tbs)
  All purpose flour 1 Cup (16 tbs)
  Baking powder 1 1⁄4 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Apple butter/Spiced apple butter / peach butter 3⁄4 Cup (12 tbs)
  Buttermilk 1⁄2 Cup (8 tbs)
  Refrigerated egg product 1⁄4 Cup (4 tbs), thawed (Or Frozen)
  Honey 2 Tablespoon
  Cooking oil 1 Tablespoon
  Snipped pitted whole dates 1⁄8 Cup (2 tbs)
Directions

Lightly coat twelve 2 1/2-inch muffin cups with cooking spray; set aside.In a large bowl stir together oat bran, flour, baking powder, baking soda, and salt.
Make a well in the center of flour mixture.
In a medium bowl combine apple butter,buttermilk, egg product, honey, and oil.
Add all at once to flour mixture.
Stir just until moistened (batter should be lumpy).
Fold in the chopped dates.
Spoon batter into prepared muffin cups, filling each about three-fourths full.
Bake in a 400°F oven for 18 to 20 minutes or until golden brown.
Cool muffins in pan on a wire rack for 5 minutes.
Remove from muffin cups.
