Banana Oat Bran Squares
|Egg||1 , slightly beaten|
|Granulated sugar replacement||3 Teaspoon|
|Vanilla extract||1 Teaspoon|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Oat bran flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Coarsely chopped walnuts||1⁄3 Cup (5.33 tbs)|
Slightly whip bananas in a bowl.
Add beaten egg, sugar replacement, and vanilla.
Beat just until blended.
Stir in flours, baking powder, and baking soda thoroughly.
Spray a 9 x 9 in. (23 x 23 cm) baking pan with vegetable oil spray.
Spread batter into the bottom of the pan.
Sprinkle with the walnuts.
Bake at 350°F (175°C) for 18 to 25 minutes or until toothpick inserted in middle comes out clean.
