Apple Butter Bran Muffins
|Whole wheat flour||1 Cup (16 tbs)|
|Wheat bran||1 Cup (16 tbs)|
|Oat bran||1⁄2 Cup (8 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Apple butter||1 Cup (16 tbs)|
|Buttermilk||1 Cup (16 tbs) (non fat)|
|Dark raisins||1⁄2 Cup (8 tbs)|
1. Combine the flour, wheat bran, oat bran, baking soda, and cinnamon, and stir to mix well. Add the apple butter, buttermilk, and egg whites, and stir just until the dry ingredients are moistened. Fold in the raisins.
2. Coat muffin cups with cooking spray, and fill 3/4 full with batter. Bake at 350°F for 15 to 18 minutes, or until a wooden toothpick inserted in the center of a muffin comes out clean.
3. Remove muffin tin from oven, and allow it to sit for 5 minutes before removing muffins.
