Whaling Station Bouillabaisse
|Onion||1 , chopped|
|White of leek||1 , chopped|
|Olive oil||1 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
|Dry white wine||1 Cup (16 tbs)|
|Fish stock/Water and part clam juice||1 Quart|
|Raw rock clams||12 (In Their Shells)|
|Raw shrimp||8 Large|
|Halibut fillets/Turbot fillets/red snapper/ rock cod/ sea bass||1 1⁄2 Pound|
Using a large soup kettle, saute onion and leek in oil until limp.
Add garlic, wine, stock, celery leaves, and salt and pepper.
Cover and simmer 15 minutes.
Add clams, shrimp, and fish and simmer 10 to 15 minutes longer, or until fish is cooked through.
Ladle into large bowls.
