Bouillabaisse For One

Ingredients
  Diced onion/Diced leeks 2 Ounce
  Garlic 1 Clove (5 gm), minced
  Parsley sprig 1
  Bay leaf 1 Small
  Saffron 1 Dash
  Thyme 1 Dash
  Paprika 1 Dash
  Water 2 Cup (32 tbs)
  Tomato 1 Medium, diced
  Pared potato 3 Ounce, diced
  Boneless fish 8 Ounce (Boned Fish)
  Salt To Taste
  Pepper To Taste
Directions

In small saucepan cook onion and garlic 2 minutes.
Add parsley and seasonings; cook 1 minute longer.
Add remaining ingredients, except fish.
Cover; simmer 5 minutes.
Add fish, simmer about 7 minutes or until fish flakes easily at touch of a fork.
Serve in soup bowl.
