These delicious petits fours may be flavoured with vanilla, or with orange-flower water, or with almond essence.
In an earthenware bowl, cream 3 oz.
of softened butter with 5 02.
of caster sugar.
Fold in gradually 2 very stiffly-beaten whites of egg, then 2 oz.
offlour, a few drops of vanilla essence or almond essence or a tablespoonful of orange-flower water from the chemist's shop.
Grease a large flat tin, then, using a piping bag, if you have one, make slender cat's-tongue shapes from the mixture on the greased tin, and bake in a moderate oven.
If you want to make the almond variety, sprinkle finely chopped almonds over the cats' tongues before you put them in the oven.
Another variation is to sprinkle granulated sugar on them instead of the almonds, giving a pearly effect.
