Clafouti is one of my favorite desserts but I usually make it using berry pie -filling from a can because fresh fruit needs baking expertise and the batter becomes thin and runny with the fruit juices, but this recipes is so simple and fool-proof that I no longer use canned fruit. Fresh fruit is indeed the star of this classic French Dessert. The key here is to use pancake batter using three eggs instead of two.
