Blueberry Orange Floating Islands
|Hot water||3 Cup (48 tbs)|
|Cornstarch||1 1⁄2 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Blueberries||1 Cup (16 tbs) (Fresh Or Frozen)|
|Banana||1 Medium, sliced to make 1 cup|
In a medium skillet heat the water till simmering.
Meanwhile, for meringue, in a large mixer bowl beat egg whites and vanilla to soft peaks (tips curl over).
Gradually add sugar, beating to stiff peaks.
Drop meringue by spoonfuls into simmering water, making 4 mounds.
Simmer, uncovered, about 5 minutes or till meringues are set.
Lift meringues from water with a slotted spoon.
Drain meringues on paper towels.
Meanwhile, in a small saucepan stir together sugar and cornstarch.
Add orange juice all at once.
Cook and stir till thickened and bubbly, then cook and stir 2 minutes more.
Remove saucepan from heat.
Stir in blueberries and banana.
Spoon the fruit mixture into individual dessert dishes.
Top each with a meringue.
