Blueberry Mountain Dessert

Ingredients
  Frozen unsweetened blueberries 1 Pound
  Aspartame 5 Tablespoon
  Lemon juice 1⁄2 Teaspoon
  Vanilla ice cream 2 2⁄3 Cup (42.67 tbs) (Reduced Calorie)
  Prepared nondairy whipped topping 8 Teaspoon
Directions

Remove 54 cup (125 mL) of the blueberries from the package.
Set aside.
Puree remaining blueberries, aspartame sweetener, and lemon juice in a food processor or blender.
Pour the pureed blueberries into a heavy saucepan.
Cook and stir over medium heat until mixture is very thick.
Transfer to a bowl and chill for at least 30 minutes.
Meanwhile, soften the ice cream.
Line eight muffin or custard cups with plastic wrap.
Pack each cup with 1/3 cup (90 mL) of ice cream.
Freeze until firm.
