Creamy Blueberry Bisque
|Fresh blueberries||480 Milliliter (2 Cups)|
|Water||480 Milliliter (2 Cups)|
|Granulated sugar||80 Milliliter (1/3 Cups)|
|Brown sugar||15 Milliliter (1 Tablespoon)|
|Cinnamon stick||1 Inch|
|Lemon||1 , thinly sliced|
|Plain non-fat yogurt||480 Milliliter (2 Cups)|
|Apple juice||240 Milliliter (1 Cup, For Garnish)|
|Plain yogurt||240 Milliliter (1 Cup, For Garnish)|
Reserve a few blueberries for garnish.
Place the remaining blueberries, water, sugars, cinnamon and lemon in a saucepan.
Simmer, uncovered, for 15 minutes, then drain through a sieve into a bowl underneath.
Chill the sieved liquid.
Just before serving, whisk together liquid, yogurt and apple juice.
Garnish each serving with a spoonful of yogurt and a few berries.
