Veal Chops And Fresh Blackberries

Ingredients
  Olive oil 1 Tablespoon
  Veal chops 8 , trimmed of fat
  Dry shallot 1 , peeled and chopped
  Dry white wine 1⁄2 Cup (8 tbs)
  Veal stock/Beef stock 1 1⁄2 Cup (24 tbs), heated
  Cornstarch 1 Tablespoon
  Cold water 2 Tablespoon
  Blackberries 1 Cup (16 tbs), washed
  Chopped fresh parsley 1 Tablespoon
Directions

? Preheat oven to 350 °F (180 °C).
? Heat oil in ovenproof frying pan over medium heat. Add chops and cook about 4 minutes on each side, depending on thickness. Remove meat from pan and set aside.
? Add shallot and wine to hot pan. Cook 3 minutes over high heat. Stir in veal stock and season; cook 5 minutes.
? Dissolve cornstarch in cold water and incorporate into sauce. Add berries and veal chops. Place in oven and cook 5 minutes.
? Sprinkle with parsley and serve.
