Blackberries In Framboise
|Sugar||2 Cup (32 tbs)|
|Water||2 Cup (32 tbs)|
|Cinnamon stick||1 , broken|
|Grated lemon peel||1 Tablespoon|
|Freshly grated nutmeg||1⁄2 Teaspoon|
|Framboise||1⁄2 Cup (8 tbs) (Raspberry Brandy)|
Extract juice from 1 pint blackberries.
Measure 1/2 cup juice and set aside.
Combine sugar, water, cinnamon stick, lemon peel and nutmeg in a large sauce pot.
Bring to a boil.
Reduce heat and simmer 5 minutes.
Strain syrup; return to sauce pot.
Add blackberry juice, remaining blackberries and raspberry brandy; and reheat to a boil.
Remove from heat.
Pack blackberries into hot jars, leaving 1/2-inch head space.
Pour syrup over blackberries, leaving 1/2-inch head space.
Remove air bubbles.
Process 10 minutes in boiling water bath.
