Pour 1/4 of a glass of water into a saucepan, add 9 oz.
of sugar, let it melt, then bring the syrup gently to the boil.
At boiling point, stir in quickly 3/4 lb.
of flour.
Remove from the heat at once, and mix to a thick firm paste, adding a tablespoonful, a little at a time, of essence of orange-flower.
(Note: Orange-flower water from the chemist.) Use 2 teaspoonfuls to transfer the paste in walnut-sized portions to a greased tin.
Brush these over with cold water and bake in a very mild oven for 10 or 12 minutes.
