Passion Fruit Biscuits
|Butter||6 Ounce (175 Grams)|
|Caster sugar||2 Ounce (55 Grams)|
|Plain flour||6 Ounce (175 Grams)|
|Corn flour||2 Ounce (55 Grams)|
In a large mixing bowl beat the butter and sugar until it is light and fluffy.
Sift in the two flours then with your hands mix to a firm dough.
Cut the fruit in half and scoop out the pulp with a teaspoon.
Stir in the passion fruit pulp and transfer onto greaseproof paper, forming into a roll.
Cover well and chill for an hour in the refrigerator.
Lightly grease two baking sheets with vegetable oil.
Take out the roll, which should be cold and firm now and cut into 5 mm - 1/2" slices.
Place them all on the baking sheets and bake in a pre heated oven for 20 minutes until lightly brown.
Allow 5 minutes on the baking sheet before transferring onto the cooling tray.
Store in an airtight container.
