Almond Wine Biscuits

  Shortening 1⁄2 Cup (8 tbs)
  Granulated sugar 1⁄3 Cup (5.33 tbs)
  Egg yolks 2 , unbeaten
  Shelled almonds 3⁄4 Cup (12 tbs), coarsely ground
  Grated lemon rind 1⁄2 Teaspoon
  Anise extract 1⁄4 Teaspoon
  Sherry 4 Tablespoon
  Sifted all purpose flour 1 Cup (16 tbs)
  Salt 1⁄8 Teaspoon

Work the shortening with a spoon until fluffy, and creamy.
Add sugar gradually while continuing to work with a spoon until light.
Then add the egg yolks, and beat until the mixture is light and fluffy.
Add 1/2 c of the almonds, lemon rind, and anise extract.
Then ,stir in the sherry alternately with the flour and salt, which have been sifted together.
Drop by rounded tablespoonfuls onto remaining almonds, which have been sprinkled on waxed paper.
Toss until coated with nuts; then shape quickly into round biscuits about 1/2" thick and 1 1/2" in diameter.
Place on greased or oiled cookie sheets, and bake in moderately hot oven of 400ºF for 12-15 min., or until delicately browned.
This recipe makes 2 doz wine biscuits.
