Carrot Biscuits

Ingredients
  Flour 1 1⁄2 Cup (24 tbs)
  Finely grated carrots 1 Cup (16 tbs)
  Butter 1⁄2 Cup (8 tbs)
  Egg 1
  Ground sugar 1 Cup (16 tbs)
  Sodium bicarbonate 1 Pinch
  Milk 3⁄4 Cup (12 tbs) (For Kneading)
  Diced carrots 2 Tablespoon
  Sugar 1 Tablespoon
Directions

Sieve flour and soda bicarb together in a large mixing bowl.
Add carrots and mix.
Sprinkle some water on the diced carrot and cook with 1 tbsp sugar at low heat till sugar dissolves and carrots are dry.
Cool them.
Mix butter, egg and ground sugar together.
Mix sugar and flour mixture and knead to a hard dough with milk.
Keep in the fridge for 1/2 hour.
Knead again.
Roll out the dough 1/2 cm thick.
Prick with fork.
Cut into desired size.
Put 2-3 pieces of diced carrots at the top of each biscuit and keep in the baking tray.
Bake in a preheated oven at 160°C for 20-25 minutes.
Remove from tray and cool completely.
