Buttermilk Soy Biscuits

Ingredients
  Unbleached flour 1 1⁄2 Cup (24 tbs)
  Low fat soy flour 1⁄2 Cup (8 tbs)
  Baking powder 2 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Safflower oil 3 Tablespoon
  Buttermilk 13 Tablespoon (3/4 Cup Plus 1 Tablespoon)
  Sunflower seeds 1 Tablespoon
Directions

1. Preheat the oven to 450°.
2. Lightly spray a large baking sheet with nonstick cooking spray.
3. In a medium-size bowl stir together the dry ingredients using a fork. Add the oil and 3/4 cup of the buttermilk, and stir until a soft dough forms and leaves the sides of the bowl. Transfer the dough to a floured board and knead 8 times, then roll the dough out with a floured rolling pin to a 1/2-inch thickness.
4. Using a floured 2-inch biscuit cutter, cut the dough into 12 biscuits. Place the biscuits on the baking sheet, brush the tops with the remaining buttermilk and sprinkle with sunflower seeds. Bake on the middle rack of the oven 10 to 12 minutes, or until golden.
