Ingredients
  Unsalted butter 250 Gram
  Egg yolks 750 Gram
  Sugar 640 Gram
  Egg whites 750 Gram
  Sugar 150 Gram
  Cocoa powder 250 Gram
  Flour 375 Gram
Directions

Beat the butter, egg yolks and the 640 g of sugar.
Firmly whisk 150 g of sugar with the egg whites.
Sift the flour and the cocoa powder.
Little by little mix the flour into the egg yolk batter, then slowly mix in the egg whites.
Put the mixture into two circular spring moulds, 15 cm in diameter by 6 cm high.
Bake in the oven at a temperature of 160°C for 45 minutes
