|Soft margarine||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Light brown sugar||1⁄3 Cup (5.33 tbs)|
|Self rising flour||1 Cup (16 tbs), sifted|
|Apple pie spice||1⁄2 Teaspoon|
|Egg||1⁄2 , beaten|
1 Beat together the margarine and sugar until light and fluffy.
2 Using a metal spoon, fold in the flour and spice with the egg. Mix well.
3 Turn onto a lightly floured board and knead until smooth.
4 Roll into 12 even sized balls and arrange 6 on an ungreased 30 x 20 x 5cm/ 12x8x2 inch ovenproof glass dish (three down each side).
5 Press half a walnut on top of each one, and microwave on power 7 for 4 minutes.
6 Remove from microwave oven and allow to cool slightly before transferring to cooling rack.
7 Repeat with remaining 6 biscuits (cookies).
