Orange Spice Biscuits

  Butter/Margarine 3 Ounce, softened (About 75 Gram)
  Light brown sugar 4 Ounce (About 100 Gram)
  Egg 1 , lightly beaten
  Grated orange rind 1
  Self raising flour 7 Ounce (About 200 Gram)
  Ground cumin 1 Teaspoon

Lightly grease two baking trays.
Cream the butter or margarine with the sugar until very soft, light and fluffy.
Gradually add the egg, beating continuously, then beat in the orange rind.
Sift together the flour and cumin, then work these dry ingredients into the creamed mixture to make a fairly soft dough.
Form the dough into a roll 5 cm/ 2 in in diameter on a floured board.
Wrap in cling film and chill for 2 hours, or longer if you have time.
Unwrap the dough and cut it into 5 mm/1/4 in slices.
Place the slices well apart on the prepared baking trays.
Bake in a moderately hot oven (200 C, 400F, gas 6) for 10-12 minutes, or until golden brown.
Allow the biscuits to cool on the trays for a minute before transferring them to a wire rack to cool completely.
