Orange Sesame Biscotti

Ingredients
  All purpose flour 2 1⁄4 Cup (36 tbs)
  Sugar 1 Cup (16 tbs)
  Sesame seeds 1⁄4 Cup (4 tbs)
  Ground ginger 1 Teaspoon
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Eggs 2 Large
  Egg white 1 Large
  Vanilla extract 1 Teaspoon
  Grated orange rind 3 Tablespoon
  Thawed orange juice concentrate 1 Tablespoon, undiluted
  Vegetable cooking spray 1
Directions

Preheat oven to 325°.
Combine first 7 ingredients in a bowl.
Stir well; set aside.
Combine 2 eggs and next 4 ingredients in a large bowl; stir with a whisk.
Add flour mixture; stir until well-blended.
Turn dough out onto a baking sheet coated with cooking spray.
Shape dough into two 13-inch-long rolls; flatten to 1-inch thickness.
Bake at 325° for 25 minutes or until firm to the touch.
Remove from baking sheet; let cool 10 minutes on a wire rack.
Reduce oven temperature to 275°.
Cut each roll diagonally into 18 (1/2-inch-thick) slices.
Place slices, cut sides down, on baking sheet.
Bake at 275° for 40 minutes (cookies will be slightly soft in center but will harden as they cool).
Remove from baking sheet; let cool completely on wire racks.
