|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Chopped almond||1⁄2 Cup (8 tbs), crushed|
|Shredded lemon peel||1 Teaspoon|
|Margarine||1⁄4 Cup (4 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
Spray a large baking sheet with nonstick spray coating; set aside.
In a mixing bowl stir together flour, baking powder, chopped almond, and lemon peel.
In a small mixer bowl beat margarine with an electric mixer on medium speed till softened.
Add sugar; beat till fluffy.
Add eggs; beat well.
Stir in flour mixture.
On waxed paper shape dough into two 12 inch long logs.
Place on prepared baking sheet; flatten logs slightly.
Bake in a 375° oven for 15 to 20 minutes or till lightly browned.
Cool completely on wire racks (about 1 hour).
Cut each log into 1/2 inch slices.
Arrange slices, one cut side down, on the baking sheet.
Bake in a 300° oven for 10 minutes.
Turn over; bake 5 to 10 minutes longer or till crisp and dry.
Cool completely on wire racks.
