Watermelon Basket with Fresh Berries
|Strawberries||1⁄2 Pint, hulled|
1 Draw a scalloped edge on paper and cut out the design.
2 Use this as a guide for cutting the watermelon into a basket.
3 If needed, draw and cut out another design for the handle.
4 Carefully place the design pattern over the watermelon and cut the melon to match it.
5 Slowly lift the top of the basket, and scoop out all the watermelon meat using a melon-ball scoop.
6 Leave about 1/2 inch of the fruit intact to line the basket.
7 Set aside a few sprigs of mint for garnish.
8 Chop the remaining mint.
9 In a bowl, toss the mint with the watermelon balls, strawberries, and blueberries.
10 Transfer the watermelon mixture to the prepared baskets.
11 Using a plastic wrap or foil, wrap the basket.
12 Place in the refrigerator and chill until serving time.
13 Serve chilled.
