Old Fashioned Blueberry Buckle
|Baking powder||3 Teaspoon|
|Egg||1 , beaten|
|Milk||1⁄2 Cup (8 tbs)|
|Almond flavor||1⁄2 Teaspoon|
|Blueberries||2 Cup (32 tbs) (Fresh Or Frozen)|
|Lemon juice||2 Teaspoon|
|Flour||1⁄3 Cup (5.33 tbs)|
|Margarine||1⁄4 Cup (4 tbs)|
Sift flour with baking powder.
In mixing bowl cream margarine and sugar.
Add egg; beat until creamy.
Combine milk and almond flavoring; add to creamed mixture alternately with flour; beat until smooth.
Pour into buttered 9-inch square pan.
Sprinkle lemon juice over blueberries and spread over batter.
Mix sugar, flour, cinnamon and margarine thoroughly with fingers until crumbly.
Spread over blueberries.
Bake at 350 degrees for 45-50 minutes, or until it tests done.
Serve warm or cold, with cream, if desired.
