Peach Berry Cobbler
|Granulated sugar||1⁄2 Cup (8 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), softened|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Sliced peaches||3 Cup (48 tbs)|
|Blueberries||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Granulated sugar||2 Tablespoon|
|Ground nutmeg/Ground cinnamon||1⁄4 Teaspoon|
1. For topping, combine flour, 1/2 cup granulated sugar, and baking powder. Add milk and 1/4 cup butter all at once. Stir till smooth.
2. For filling, in a medium saucepan stir together brown sugar and cornstarch; stir in water. Add fruit; cook and stir over medium heat till thickened and bubbly. Add 1 tablespoon butter and lemon juice; stir till butter melts. Pour into a 1 1/2 -quart ungreased casserole. Spoon topping in mounds over hot filling; spread evenly over filling. Sprinkle with a mixture of coarse sugar and nutmeg. Place on a shallow baking pan in oven.
3. Bake cobbler in a 350° oven about 35 minutes or till bubbly and a wooden toothpick inserted into crust comes out clean. If desired, serve warm with vanilla ice cream.
