Beets With Sour Cream

Ingredients
  Beets 2 Bunch (200 gm)
  Boiling salted water 2 Cup (32 tbs) (adjust quantity as needed)
  Onion 1 Medium, finely chopped
  Sour cream 3⁄4 Cup (12 tbs)
  Salt 3⁄4 Teaspoon
  Freshly ground black pepper 3⁄4 Teaspoon
  Grated horseradish 2 Teaspoon
Directions

Wash the beets and leave an inch of the stems attached.
Cook the beets in boiling salted water to cover until tender.
Cool, peel and slice.
Arrange the slices in a bowl and top with the chopped onion.
Blend the remaining ingredients and spread this mixture over the beets and chopped onion.
