|Whole beets||1 Cup (16 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Wash beets, leaving three inches of tops and roots on.
Place water in cooker, insertrack, and place beets.on rack.
Cover cooker, bring pressure to cooking point (15 lbs.) and cook for 10-18 minutes, depending on the size of the vegetable.
Cool cooker at once under cold water.
Remove skin from beets with fingers, season, and serve with melted butter
