Small Pickled-Whole Beets
|Cooked beets||5 Pound|
|Vinegar||3 1⁄2 Cup (56 tbs)|
|Sugar||1 1⁄3 Cup (21.33 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Cinnamon stick||1 (3 Inch)|
Cook small beets untiltender and rub off skins.
In large kettle simmer remaining ingredients together for 15 minutes, add beets, and cook 5 minutes longer.
Pack beets into hot sterilized jars, cover with syrup, and seal at once.
Process 10 minutes in boiling water bath.
