Boiled Beets

Pare anddice 1 lb. of beets and add to 1/2 cup boiling water.
Add 1/4 tsp. salt, cover pan, and bring to a boil again.
Reduce heat and simmer for 25-40 minutes, depending upon the age and size of the beets.
Drain and serve with salt, pepper, and butter
