Ingredients
  Boiling water 6 Cup (96 tbs)
  Cooked beets 3 , sliced
  Vinegar 1⁄2 Cup (8 tbs)
Directions

Pour boiling water over beets; add vinegar.
Let stand at room temperature 2 to 4 days.
Drain off juice and use as a base for soup.
