|Onions||2 Medium, sliced|
|Sugar||2 Cup (32 tbs) (Or Use Little Less)|
|Water||1 Cup (16 tbs)|
|Lemon||1 , thinly sliced|
|Vinegar||1 Cup (16 tbs)|
Take fresh beets and trim off leaves, leaving about 2" stems on beets and tapered roots (prevents some bleeding).
Wash, cover with water and boil until tender.
Slip off skins and trim ends, then slice into a big bowl.
Slice onions into rings and lay over beets.
Mix the rest of the ingredients and boil together for 10 min.
Pour while boiling hot over pickles.
Either fill sterilized jars and cap airtight, or pack in containers when cool and refrigerate.
