Beet Lemon Conserve

Ingredients
  Lemons 2 , thinly sliced
  Ginger 1 Teaspoon, ground
  Sweet cider 1 Pint
  Cinnamon 1⁄4 Teaspoon, ground
  Beets 1 Pound, cooked, grated
  Hazelnuts 1⁄2 Cup (8 tbs), toasted
  Honey 1⁄3 Cup (5.33 tbs)
Directions

Simmer together lemon slices and cider for 15 minutes.
Add honey and beets.
Bring to slow boil.
Simmer for 20 minutes.
Add spices and nuts.
Simmer 15 minutes longer.
Pour into hot, sterilized jars.
Seal.
