Orange Beets

Ingredients
  Fresh beets 1 1⁄4 Pound (5 Medium Beets)
  Cornstarch 1 Tablespoon
  Brown sugar 1 Tablespoon
  Finely shredded orange peel 1 Teaspoon
  Salt 3⁄4 Teaspoon
  Pepper 1 Dash
  Orange juice 3⁄4 Cup (12 tbs)
  Vinegar 1 Tablespoon
Directions

Prepare and cook fresh beets.
Cut into slices.
In small saucepan, stir together cornstarch, brown sugar, orange peel, salt and pepper.
Stir in orange juice and vinegar.
Cook, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Stir in beets; heat through.
