Cold Beet Borscht

Ingredients
  Beets 6 Medium, grated
  Onion 1 Large, quartered
  Water 1 1⁄2 Quart
  Salt 1 Teaspoon
  Lemon juice 2 Tablespoon
  Honey 1⁄4 Cup (4 tbs)
  Potatoes 6 , boiled
  Hard boiled eggs 3 , quartered
  Lemon 1 Small, thinly sliced
  Yogurt/Sour cream 1⁄4 Cup (4 tbs) (As Required)
  Watercress/Parsley 1 (For Garnish)
Directions

MAKING
1.Use the grating disk of the processor, and grate beets and onions.
2.Take a soup kettle, add the onions and beets and add water and salt. Bring to a boil
3. Remove from heat and let the pot sit,covered,for 10 minutes.
4. Drizzle the honey and pour the lemon juice. The lemon juice adds color to the beets
5.Once cool, refrigerate until cold,upto 3 hours

SERVING
6.To serve add a hot potato in each and add watercress
