Spiced Pickled Beets

Ingredients
  Beets 15 Large, cooked
  White onions 3 Large
  Celery seed 1 Teaspoon
  Mustard seed 1 Teaspoon
  Cardamom 1 Teaspoon
  Cinnamon pieces 6
  Cider vinegar 5 Cup (80 tbs)
  Brown sugar 3⁄4 Cup (12 tbs)
  Salt 1 Tablespoon
Directions

GETTING READY
1) Peel and slice the beetroots.
2) Peel the onions and slice them.

MAKING
3) In a bowl, mix together beets and onions, and place it in sterilized jars.
4) In a saucepan, mix together celery seeds, mustard, cardamom, cinnamon, vinegar, sugar and salt.
5) Heat the vinegar mixture to a boil and remove from heat.

FINALIZING
6) Pour the vinegar mixture over the sliced vegetables.
7) Stir a small spoon in the jar, to escape the trapped air bubbles if any.
8) Allow the mixture to cool down and seal with sterilized lids.
9) Place the jars in refrigerator.

SERVING
10) Serve as desired.
