|Cider vinegar||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|

1 Drain the beets well, and reserve the juice.
2 In a small saucepan, mix beet juice, vinegar, sugar, arrowroot, orange peel and cloves.
3 Cook, stirring constantly, over medium heat, until the sauce thickens.
4 Mix in beets and butter.
5 Simmer for 5 minutes or until beets are thoroughly heated.
6 This sweet-sour vegetable is ideal with any meal.
