Cranberry Orange Beets

Ingredients
  Cranberry juice cocktail 1 Cup (16 tbs)
  Cornstarch 1 Tablespoon
  Sugar 1 Tablespoon
  Canned beets 32 Ounce, sliced and drained (2 cans, 16-ounces each)
  Orange peel 1⁄4 Teaspoon, grated
Directions

MAKING
1. In saucepan gradually stir cranberry juice into cornstarch, sugar and dash salt.
2. Cook stirring over medium heat till mixture thickens and bubbles.
3. Add beets and orange peel and simmer, uncovered, 10 minutes.

SERVING
4. Use the beets to garnish ice-creams, desserts or as desired.
