Cranberry Orange Beets
|Cranberry juice cocktail||1 Cup (16 tbs)|
|Canned beets||32 Ounce, sliced and drained (2 cans, 16-ounces each)|
|Orange peel||1⁄4 Teaspoon, grated|
1. In saucepan gradually stir cranberry juice into cornstarch, sugar and dash salt.
2. Cook stirring over medium heat till mixture thickens and bubbles.
3. Add beets and orange peel and simmer, uncovered, 10 minutes.
4. Use the beets to garnish ice-creams, desserts or as desired.
