Puree Of Beets

Ingredients
  Beets 6 (Use 1 Small Bunch)
  Cider vinegar 1 Tablespoon
  Heavy cream/Creme fraiche 2 Tablespoon
  Creme fraiche/Heavy cream 2 Tablespoon
  Orange 1 (Use Zest)
  Orange zest 1 (Of 1 Fruit)
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) Heat a saucepan with water in it. Put in the beets and allow it to come to a boil.
2) Reduce the heat and let it simmer over medium heat till tender. This will take about 25 to 30 minutes.
3) Using a peeler, peel the beets and puree in a food processor.
4) Add in vinegar, cream, orange zest, and salt and pepper. Blend again.

SERVING
5) Serve warm.
