The Local Cafe's (Ventura, Ca) Beet Salad With Goat Cheese

Ingredients
  Golden beet 1 Pound, roasted (5 beet)
  Goat cheese crumbles 1 Cup (16 tbs)
  Walnuts 1 1⁄2 Cup (24 tbs)
  Apples 2 Large, sliced
  Lemon juice 1⁄2 Cup (8 tbs)
  Walnut oil/Hazelnut oil 2 Tablespoon
  Extra virgin olive oil 1 Tablespoon
  Salt & pepper To Taste
Directions

GETTING READY
1. Preheat oven to 375*F.
2. On a baking sheet, place the beets and roast in oven for 45 minutes.
3. Let it cool.

MAKING
4. In a bowl, combine beet, walnuts, sliced apple, lemon juice, walnut oil, extra virgin olive oil and mix.
5. Add salt and pepper to taste. Toss it well.

SERVING
6. Garnish with goat cheese crumble and serve.
