1. Preheat oven to 375*F.
2. On a baking sheet, place the beets and roast in oven for 45 minutes.
3. Let it cool.
4. In a bowl, combine beet, walnuts, sliced apple, lemon juice, walnut oil, extra virgin olive oil and mix.
5. Add salt and pepper to taste. Toss it well.
6. Garnish with goat cheese crumble and serve.
