Sally'S Pickled Beets
|Beet juice||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Beets||1 Pound, sliced|
|Bay leaf||1 , broken|
|Vinegar||1⁄2 Cup (8 tbs)|
Drain beets, reserving V4 -cup juice.
Arrange beets in a shallow dish with onion, sliced and separated into rings.
Add cloves, peppers and bay leaf.
Mix beet juice, vinegar and sugar in a saucepan.
Heat, stirring from time to time, until it comes to a boil and the sugar is dissol- ved.
Pour over beets.
