Quick Harvard Beets
|Beets||1 1⁄4 Pound (fresh, about 5 medium)|
|Water||1⁄2 Cup (8 tbs)|
1. Prepare and microwave beets.
2. Mix sugar, cornstarch, salt and pepper in 1-quart casserole. Gradually stir in water and vinegar. Microwave uncovered on high 2 to 3 minutes, stirring every minute, until mixture thickens and boils.
3. Stir in beets. Cover tightly and microwave 2 to 3 minutes or until beets are hot.
