Beet Cocktail

  Cooked beets 4 Medium
  Lemon juice 1 Tablespoon
  Vinegar 4 Teaspoon
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Prepared horse-radish 1⁄2 Teaspoon
  Grated onion 1⁄2 Teaspoon
  Worcestershire sauce 3 Drop
  Chopped parsley 2 Tablespoon
  Grated lemon rind 1⁄2 Teaspoon
  Finely diced lettuce 1⁄4 Cup (4 tbs)
  Finely diced celery 1⁄4 Cup (4 tbs)

Slip skins from the beets and shred on a coarse grater.
Combine remaining ingredients, except celery and lettuce and mix well.
Pour over beets, cover and chill thoroughly.
Just before serving, add the celery, toss lightly and serve in cocktail glasses with a frill of lettuce.
